Born in South Africa, until recently Gillman taught painting at Central St Martin's School of Art and at the Royal College of Art. She is a member of the London Group, a group of artists whose singular objective since its foundation in 1913 has been to provide an alternative forum to the Royal Academy for contemporary visual art. Gillman's art is full of colour, and by her own admission owes much to the works of Braque and Matisse. Her paintings work on many different levels, allowing the viewer to see them either as simple abstract depictions of shapes, or as holding significant meaning that explores issues of memory and transformation.
